Production area and territory
The Trento DOC is born in the province of Trento in the territories of the Adige Valley, the Cembra Valley, the Vallagarina, the Sarca Valley, the Valsugana and the Giudicarie Valleys. This wine from Trentino is produced in an area that extends over about 800 hectares, characterized by varying altitudes, which can reach a maximum of 800 meters above sea level. The climate is cold in winter and mild in summer, characterized by thermal excursions and mitigated by a Mediterranean breeze coming from Lake Garda. These climatic characteristics are beneficial for the vines and play a primary role in the maturation of the grapes.
Grapes and production method
The Trento DOC is produced using the most suitable grapes for sparkling wine with fermentation in bottle, namely Chardonnay, Pinot Blanc, Pinot Noir and Pinot Meunier. This sparkling wine, produced exclusively with the "classic method", is fermented in steel or wooden barrels, and then bottled with the addition of yeast and sugars. The maturation time on yeasts is at least 15 months but can be increased to 36 for the Riserva version. The time of maturation on the yeasts affects the aromatic complexity, making the wines more refined and with more intense aromas.
Types and organoleptic characteristics
The Trento DOC can be vinified in Bianco or Rosè. The Trento DOC Bianco is also available in Brut, Millesimato and Riserva. It is characterized by a delicate and persistent perlage and the nose offers hints of apricot, hazelnut, exotic fruit, vanilla, bread, white flowers and jasmine. The rose, on the other hand, is characterized by a pink cherry color that can be more or less intense. The bouquet expresses characteristic fruity aromas, while the palate is harmonious, medium-bodied and sweet, with nuances of small red fruits, flowers and citrus.
