Manual harvest of the grapes between the end of August and the first ten days of September. The grapes are then gently pressed, followed by static decantation of the musts and fermentation at a controlled temperature in stainless steel tanks. This is followed by aging on the noble lees for over 7 months. Subsequently, refermentation takes place in the bottle. After tirage and prise de mousse, the sparkling wine rests in the bottle for 36 months on its own lees before disgorging. The dosage is done with a small amount of liqueur in the Brut style.

The fruity and fragrant notes of Chardonnay are a prelude to the complex and enveloping aromas typical of Pinot Noir. The nose begins with scents of Golden apple and white peach, followed by warm and silky sensations of ripe small fruits. The long aging on the lees reveals delicate hints of bread crust. 1673 Millesimato is complex and structured, with an elegant and harmonious finish, supported by a pleasant acidity that enhances the length of the taste.
