Passito

Sweet wines are sweet wines made from grapes left to dry after the harvest to concentrate the sugars and flavors. This technique, practiced in different regions of Italy, allows to create rich, intense and aromatic wines, often with a perfect balance between sweetness and acidity. Among the most renowned passito are the Passito di Pantelleria, produced on the homonymous Sicilian island with Zibibbo grapes. Another example is Vin Santo della Toscana, made with Trebbiano and Malvasia grapes, which are hung to dry for several months. The result is a wine with hints of dried fruit, honey and vanilla, perfect to accompany typical desserts such as cantucci. Recioto di Soave and Recioto della Valpolicella are other famous examples, coming from Veneto, respectively whites and reds, with a long production tradition. Check out the selection!
