TASTING NOTES

Production

Alto Adige Passito Cashmere is a blend of 95% Gewürztraminer and 5% Sauvignon, creating a unique elixir. The grapes are harvested in late September, laid out on racks to dry for 4 months, whilst fermentation proceeds slowly over 6 weeks, followed by a long ageing period of one year in stainless steel with further maturation in the bottle.

Organoleptic Characteristics

Amber-coloured and velvety, it offers a rich bouquet: from dried apricots to candied fruit, rose petals with candied orange peel and a caramelised finish. On the palate, it bursts into a concentrated and complex harmony of flavours, where the firm structure and inviting sweetness are balanced by a fresh acidity, finishing with an elegant and persistent aftertaste of great rarity.

Occasion and Pairing

Suitable for accompanying various desserts, this sweet wine is also interesting when paired with blue-veined cheeses.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 12–14°C.

THE WINERY

Elena Walch

The winery Elio Grasso is located in the municipality of Monforte d'Alba, has 42 hectares of which 24 of woods and meadows surrounding the 18 planted vineyards, now a UNESCO Heritage. A winery where you love to be recognized first as farmers and then as producers: it is the way to honor and continue the work of those who have faced the difficulties typical of those working with nature and wine. For this family wants to highlight, without presumption, those convictions and ways of being of all the peasant families of Langa, those characteristic traits that make the difference. The vineyards are owned by the family, they have always been part of the estate, in an area that has always been considered a high vocation, As evidenced by the inclusion of vineyards in the map of the best vineyards created by the great historian Lorenzo Fantini at the beginning of the last century. Aware of the primary need to respect and enhance the particular characteristics of vineyards, these terroirs were considered as a kind of magical place where to find historical roots.
