TASTING NOTES

Production

Alto Adige Passito Cashmere is made from a blend of 95% Gewürztraminer and 5% Sauvignon for a unique elixir. The grapes are harvested at the end of September and placed on racks to dry for 4 months, while fermentation lasts slowly for 6 weeks. This is followed by a long aging period of one year in stainless steel, with additional maturation in the bottle.

Organoleptic Characteristics

Ambra and velvety, it expresses a rich bouquet: from dried apricots to candied fruit, rose petals with candied orange zest, and a caramelized finish. On the palate, it bursts into a concentrated and complex harmony of flavors, where the firm structure and inviting sweetness are balanced by fresh acidity, culminating in an elegant and persistent finish of great rarity.

Occasion and Pairing

Suitable for pairing with various desserts, this sweet wine is also intriguing when matched with blue cheeses.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 12-14°C.
