TASTING NOTES

Production

A wine made from 100% Garganega grapes grown on the hills of Val d'Illasi. A wine resulting from the partly unwitting collaboration of three distinct wineries. The original vinification actually dates back to the Trabucchi d'Illasi winery, which, at the time of sale, still had this Recioto di Soave—reclassified as Passito Veneto IGT—aged in wood. The Dal Forno brothers, surprised by the potential still expressed in this wine, decided to bottle it in exclusive collaboration with the Bennati winery for Signorvino. Fermentation and ageing in second- and third-use barriques for approximately 4 years. 100ml = 438 kJ / 105 kcal

Organoleptic Characteristics

Hints of dried apricot, peaches in syrup, honey and hazelnut brittle.

Occasion and Pairing

Veneto Bianco Passito Bigiù pairs beautifully with dry pastries and blue cheeses, but is also perfect as a meditation wine.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 10–12°C.

Bennati

After Antonio Bennati, known as Toni Recioto, a nickname derived from the dried grape wine of the same name, had spent 50 years trading wine in famous straw flasks, his son Annibale founded the Cantine Bennati in 1920 in Cazzano di Tramigna, which today still offers the best wines from the Valtramigna area of Veneto. It is a winery in continuous evolution. New crushing machinery and a new logistics centre ensure efficiency and speed to meet demand. Bennati also has new vineyards where it is implementing plans to reassess the traditional production techniques of its wines. These plans also aim to enhance the offer, limiting production of high quality wines, which can transmit the values of the land with their scents and aromas. The excellence of the Valtramigna production area is an important factor that contributes to the production of some of the most renowned red and white wines of the Veneto region.
