This family-run winery dates back to the start of the century, when it was founded by Silvio Quintarelli in the municipality of Marano di Valpolicella. In the 1950s, Giuseppe, the youngest of Silvio’s sons, took over the running of the company in order to continue the family’s vineyard and winery tradition. Quintarelli’s white raisin wine “Amabile del Cerè” is made from Chardonnay, Garganega, Sauvignon and Trebbiano Toscano grapes, harvested in late August and early September. The vineyards are located in Cerè in the municipality of Negrar, at an altitude of 350 metres above sea level on limestone-basalt soils. After the grape harvest, the bunches of grapes are left to dry on racks for greater concentration of aromatic substances and sugar content. Towards the end of January, the grapes are pressed, resulting in fermentation with only indigenous yeasts that lasts about 50 days and ageing in French oak barrels for about 5-6 years. Amber-coloured with golden reflections, Amabile del Cerè is intense, complex and very fine in its aromas, with notes of candied fruit, spices, hazelnut, caramel, white chocolate and vanilla. The palate is sweet and very deep, with a long balance between sweetness and acidity. Freshness and elegance, a perfect combination for a raisin wine that never tires. It is ideal as a pairing with desserts of various kinds, or with white and dark chocolate. For the brave, try it with blue cheeses.
