The grapes were vinified separately. The must obtained by soft pressing
was subjected to cold static decanting to promote
natural clarification. Fermentation at a controlled temperature of 18 °C for 12
days was carried out using selected varietal yeasts in order to best enhance the aromatic profile of the grape variety. The wine is aged for 6 months on fine lees in stainless steel tanks and undergoes mild filtration before bottling in order to preserve its structure and persistence on the palate.
