Aquila Reale is the Cru of Cesarini Sforza. The grapes harvested manually in small containers in the first decade of September are gently pressed whole in a vertical marble press and only 50% of the must is selected for the Aquila Reserve. The fermentation takes place partly in oak carats and partly in steel where the wine rests at least 7 months in contact with its lees. In this period malolactic fermentation takes place. In late spring the cuvée is made waiting for the early June draft, followed by over 100 months of aging. The days, months and years will then complete that evolutionary miracle of scents, aromas and sensations that with a respectful disgorgement and the following 6 months of waiting before the release on the market will be exalted in the glass. The straw yellow color with golden reflections reflects the freshness and durability of this vintage. On the nose the sweetness of the aromas recalls candied fruit, notes of small pastry with a slightly citrus finish. At disgorgement, topping up is done only with a small amount of shipping syrup to respect the typicality of the territory from which the grapes come. The excellent structure and persistence supported by a pleasing acidity give the sparkling wine great personality and elegance. The power is supported by great finesse and elegance. Throughout the meal, it goes well with great first courses. Excellent with both a risotto and stuffed pasta, even seafood. To fully appreciate the style, Aquila Reale must be served at a service temperature of 8/10 ºC.
