TASTING NOTES

Production

The Fiano grapes are hand-harvested in the hills of Sorbo Serpico, in Irpinia, and undergo fermentation in temperature-controlled stainless steel tanks (16–18 °C). This is followed by 4–5 months of ageing in stainless steel on the fine lees, with repeated batonnage to enhance structure and complexity; the wine then rests for a few months in the bottle before release.

Organoleptic Characteristics

With a deep straw-yellow colour, the nose offers notes of chamomile flowers, freshly picked fruit and candied citron peel. On the palate, it is smooth and rich, with a vibrant freshness and a mineral character, finishing with an elegant and persistent aftertaste.

Occasion and Pairing

Ideal with refined seafood dishes, such as shellfish, delicate or grilled fish, but it also pairs beautifully with white meats and medium-aged cheeses.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 12–14°C.

THE WINERY

Feudi di San Gregorio

Producer of fine Campanian wines, the Feudi di San Gregorio winery represents its land, Irpinia, in the province of Avellino at its best. Recognized as a symbol of the rebirth of the south from an oenological point of view, it is also a representation of a deeply rooted drinking culture that rediscovers the flavours of the Mediterranean and their essence. Aimed at researching the enormous potential that the area offers and at preserving tradition, today the winery can count on over 300 hectares of vineyards between both owned and rented vineyards. In these territories, which extend between 350 and 700 metres above sea level, the vineyards have always been flanked by orchards, olive groves and woods. The soils are predominantly volcanic and give life to genetically unique plants. The environmental balance is always at the centre of attention during all the winemaking processes, as is also demonstrated by the rooms in which these take place. Among the municipalities of Tufo, Santa Paolina and Taurasi, important designations are produced such as the white wines Fiano di Avellino and Greco di Tufo. From the renovation of the spaces, which took place in 2004, derived from research to bring together tradition with modern production technologies, specific winemaking facilities were created. The “Dubl” sparkling wines have a specific room, which then leads to a barrel cellar where you can find the red wines such as Taurasi. Every single space is designed to blend harmoniously into the land and to maintain a balanced impact on the environment.
