TASTING NOTES

The Cavalleri family's holdings in Erbusco were first documented in the fifteenth century, but it is from the late nineteen-sixties onwards, thanks to the contribution of Gian Paolo Cavalleri and his son Giovanni, that the company began its contemporary journey, carving out a place for itself among the companies that have been able to make the most of the vocation of the land and the quality of the wines of Franciacorta. Guided to this day by Giovanni's grandchildren, Cavalleri now owns 42 hectares of vineyards, cultivated according to principles of utmost respect for the environment and the ecosystem, so as to be able to guarantee the highest quality grapes in the winery, and to be able to best represent their seasonal and varietal characteristics. The exception that confirms the rule; this Franciacorta Rosé is the only sparkling wine produced by Cavalleri to combine Pinot Noir with Chardonnay in the cuvée blend. Matured on yeast for over 40 months before disgorgement, this rosé sparkling wine is distinguished by its finesse and elegance. It has a pale pink colour in the glass with hints of coppery reflections, the perlage is very fine and persistent. On the nose, notes of grapefruit and small (red) berry fruit alternate with fragrant sensations of bread crusts and small pastries; on the palate it is fresh and dynamic, characterised by a very pleasant fruity acidity and excellent full flavour. Persuasive and refined, this rosé sparkling wine is perfect to drink on the occasion of a romantic dinner, ideal as a pairing with seafood dishes such as linguine with lobster or seafood risotto.
