TASTING NOTES

Production

Located right in the heart of the Salice Salentino DOC, more precisely in the municipality of San Donati, the Paololeo winery boasts 25 hectares of vineyards and is a family-run business managed with passion by the heir of the same name, Paololeo. The style is youthful, like the owners, whilst respecting tradition and its traditional grape varieties. The Primitivo di Manduria Passo del Cardinale is a Apulian red wine made from Primitivo grapes. This grape has the distinctive feature of ripening early enough to allow for a second harvest, which is used to balance the acidity of the very sugar-rich fruit. The grapes for Passo del Cardinale are fermented for 8–10 days at a controlled temperature, whilst the total maceration period is 15 days. Ageing takes place for 3 months in American oak barriques and 6 months in steel. Nutritional values: 355 kJ / 85 kcal per 100 ml

Organoleptic Characteristics

In the glass, it is an intense ruby red; on the nose, it is an explosion of black fruits, particularly plum; it finishes with a spicy, liquorice-like note. On the palate, it is full-bodied yet well-balanced, with subtle, velvety tannins.

Occasion and Pairing

The perfect everyday wine, we recommend pairing it with grilled or roasted red meats.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 14–16°C.

Allergens: Solfiti

THE WINERY

Paololeo

The Paololeo winery was established in the heart of Salento, in Puglia, and from the start set itself the goal of producing high-quality wines to suit all tastes and budgets. An ambitious project that was passionately pursued, and which reaps its rewards today. The winery, in fact, is a real point of reference for winemaking in Puglia. Thanks to their commitment and passion, in fact, the founding family has been able to study the land and its most valuable characteristics to create Pugliese wines that best describe and enhance the territory. The vines stand on clay-limestone soil, alternating between sandier areas and others with emerging rock. These, combined with the mild climate typical of Salento, have made this area one of the most fertile and suitable for crops of all kinds. The microclimate of the Adriatic coast gives the grapes an exceptional quality, which can be found in the final product. Name and address of producer/distributor: Paololeo - Via Tuturano, 21, 72025 San Donaci (BR). Products from this winery should be stored in a cool, dry place away from heat sources.
