The Franciacorta Cabochon Fuoriserie Rosè N.07 is made by the winery Monte Rossa with grapes from the vineyards located on the morainic hills of Bornato. For the creation of this cuvée we use 80% wines from historical Cru and 20% Reserve wines. The fermentation takes place in steel and oak barrels, followed by an aging of more than 40 months. The glass is a soft pink colour, with fine and persistent perlage. The nose is followed by floral scents, peony, notes of white peach, touches of herbaceous and citrus; on the palate it is fresh, balanced, crisp, with echoes of salt and white pepper. Elegantly fruity and floral, it is ideal to accompany a dinner of fish and crustaceans, such as a shrimp and lemon risotto. To fully appreciate the style, this wine should be served at a service temperature of 8/10°C
