Production

CruPerdu Grande Annata Millesimato Extra Brut is the result of a carefully selected harvest and is made from 70% Chardonnay and 30% Pinot Noir grapes. Only in the finest vintages do the grapes from these two varieties achieve a distinctive acidity and savouriness, characteristics that are also evident in the wine, lending it greater complexity and longevity. When these characteristics are confirmed after at least 48 months on the lees, a limited number of bottles are selected and left to rest for a further year before being sold. Franciacorta CruPerdu is vinified in stainless steel and aged in wood.

Organoleptic Characteristics

Intense straw-yellow in colour, fragrant notes of bread give way to fruity nuances of almond and hazelnut. On tasting, the structure and complexity are surprising, with a rounded mouthfeel resulting from many months of ageing and a savoury, dry finish.

Occasion and Pairing

A Franciacorta of great structure that pairs magnificently with sophisticated fish dishes such as stuffed tench ravioli and raw meat dishes, such as Sorana tartare.

Serving Temperature

To fully appreciate its style, this Franciacorta should be served at a temperature of 8–10°C.

THE WINERY

Castello Bonomi

The Castello Bonomi estate, owned by the Paladin family, covers an area of 24 hectares in Franciacorta. The vineyards are enclosed in the marvellous natural amphitheatre of Monte Orfano, and stretch out up to 275 metres above sea level with south, south-east, south-west exposure, in the municipality of Coccaglio. Situated on hilly terrain, the vineyards enjoy a particular microclimate with cool temperate influences that gives the area specific and unique characteristics that allow the grapes to ripen in the optimum manner. The chosen cultivation system and planting layout ensure low production and high quality of the grapes, which come from French rooted vines. Harvesting is conducted entirely by hand, and the yield per hectare is deliberately low: every little detail exemplifies the high quality of each grape. Castello Bonomi owes its name to an Art Nouveau building dating back to the late 19th century: it is the only Chateau in Franciacorta, and now the headquarters of the winery, surrounded by the splendid setting of a terraced garden. The Lombardy winery's range of sparkling wines stand out for their elegance, complex character and mineral flavour, resulting from the magic of the place and the dedication of the winemaking family.
