The Cuvée Prestige Rosé is crafted from the separate vinification of Pinot Noir and Chardonnay grapes. All grapes are hand-picked in small crates, carefully sorted, and cooled. Each bunch is selected by skilled hands and subjected to a special washing and hydro-massage system, which includes three soaking tanks and a drying tunnel. The Pinot Noir grapes, once transported to the tank, are destemmed, allowing the berries to fall by gravity. The "pink" maceration lasts 24-36 hours, just enough time to achieve the delicate pink hue characteristic of Franciacorta Rosé. After separating the must from the skins, fermentation occurs in small barrels and stainless steel tanks at controlled temperatures. The Chardonnay grapes are traditionally vinified, with whole bunch pressing, and the best fractions of must ferment separately in tanks. After 7 months of aging, the cuvée is created by blending the Pinot Noir and Chardonnay wines. The resulting cuvée is bottled and aged on the lees in underground cellars at a constant temperature of 12°C for an average of 30 months. The disgorgement is carried out in the absence of oxygen, using a unique system patented by Ca’ del Bosco, which prevents oxidative shocks and further additions of sulfites, resulting in purer, more enjoyable, and longer-lasting Franciacorta wines. Each bottle is uniquely marked to ensure traceability. Ca’ del Bosco Prestige appears with a straw-yellow color. On the nose, it opens with aromas of peach and citrus, enriched by notes of almond. On the palate, it is elegant, incredibly fresh, and fruity. Perfect for pairing with appetizers and aperitifs, it pairs beautifully with seafood dishes, raw preparations, and fresh cheeses.
