Franciacorta Cuvée Prestige is the best expression of this territory, experiences that allow to understand the raw material and its transformation processes. Cuvée Prestige is made up of 82% Chardonnay, 16.5% Pinot Noir and 1.5% Pinot Blanc with a blend of 68% base wines, 29% Reserve Wines from the previous harvest and 3% Noble Wines from Reserve, All grapes from 197 organic vineyards. The result of a careful selection of grapes and a wise vinification through the Ca' del Bosco Method, Franciacorta Cuvée Prestige comes from harvested and hand-selected grapes and the must of the base wines ferment in steel. Seven months of aging are necessary for the wine to be unbleached, mature and bring out the best character of the original vines. The wines are then blended in the magic rite of the creation of the Cuvée and only after a minimum 2 years aging on lees, this Franciacorta can express all its richness and identity. The dégorgement takes place in the absence of oxygen, using a unique system, designed and patented by Ca' del Bosco, avoiding oxidative shocks and sulphite additions. This cuvée is presented in a straw yellow glass, intense and shiny. Fine perlage, the nose shows delicate hints of white flowers and yellow fruit, with notes of pastry and herbaceous. On the palate reveals a mineral texture with hints of exotic fruit. Excellent as an aperitif, Cuvée Prestige also goes perfectly with delicate fish or vegetable appetizers, or with second courses of crustaceans. To fully appreciate the style, this wine should be served at a service temperature of 10/12°C.
