TASTING NOTES

Ayunta is a small winery located almost 700 metres above sea level on the northern slopes of Mount Etna in Sicily, near the small village of Randazzo, north of the city of Catania. Their aim is to produce wines that best reflect the terroir and the native vines of Mount Etna. The wines convey elegance, balance and freshness, expressing the pure flavour of the terroir and all the differences between each vintage from every single vineyard. Around three hectares of vineyards in total, planted on different parts of the slopes of Mount Etna, where local varieties like Nerello Mascalese and Nerello Cappuccio for reds and Carricante and Catarratto for whites are traditionally grown. The terroir is obviously volcanic, with the presence of rocks and ash, but varies from one plot to another based on the geological history of the volcano's eruptions. Etna Rosso Calderara Sottana is a Sicilian red wine made with a careful selection of 100% Nerello Mascalese grapes, in the "Calderara Sottana" district, using with the oldest vines to give it a unique expression. Once fermentation has taken place in stainless steel, with spontaneous yeasts and maceration for 21 days, the wine is ready to age in 5 hl barrels and French wooden barriques for about 18-20 months. A very limited production of around 1500 bottles that exude history and the terroir. Ruby red in colour with slight garnet reflections, the nose is dominated by notes of undergrowth and flowers followed by elegant spicy notes.
