TASTING NOTES

Maison Ruinart was founded in 1729 and today forms part of the LVMH group, representing one of the most renowned Champagne producers in the world. Maison Ruinart manages to differentiate itself thanks to its essential and natural character. The launch of the new Cuvée Dom Ruinart is always an exceptional event. After extensive research, Maison Ruinart decided to extend the Blanc de Blancs ageing phase, reinstating cork to give the wine more aromatic notes. The 2010 vintage was characterised by a very cold winter, an early summer and a very rainy August. These characteristics enhanced the aromas creating an intense aromatic richness. During a 10-year maturation, the cork imparts notes of wood, toasted almond and coffee to the cuvée. Over time, it reveals an even greater depth and aromatic complexity. More than any other Cuvée, it celebrates the savoir-faire of those who worked on each individual bottle, which is why it was disgorged by hand. Made from 100% Chardonnay grapes, it has an intense golden colour with almond-green reflections in the glass. A hint of fruitiness on the nose suggests notes of lemon, apricot and nectarine. Notes of white flowers, marzipan and Calisson d’Aix express the maturity of the vintage. Overall this is expressed on the palate with a pleasant balance, flavour and liveliness, yet with a long, delicate finish. It is the effect of velvety acidity, the freshness of stone fruit and a surprising full flavour. Champagne Brut Blanc de Blancs Dom Ruinart is perfect as an aperitif or even with vegetable starters, such as spelt risotto with celeriac and black truffle.
