TASTING NOTES

Le Piane winery is located in the Natural Park of Monte Fenera, in the province of Novara and is today one of the wine reference points of northern Piedmont. Boca di Le Piane consists of several types of grapes: Nebbiolo 85% and Vespolina 15%, grapes that give wines of great spice with floral and honeyed hints. Boca DOC is a wine that needs a long aging and evolves its character after 3-4 years in wooden barrels. Fermentation and maceration on the skins take place for 30 days in open wooden vats and open steel vats, with manual fulling for 1-2 times a day. After pressing, malolactic fermentation takes place with a stay in large oak barrels of Slavonia and a further aging in the bottle. Boca is presented to the glass with an intense ruby red color, where are perceived to the nose aromas of violet, ripe berries and pomegranate that fade in licorice and tobacco. On the palate the power and elegance of silk come together in a fascinating game, to end with a long and slightly bitter tail. The great complexity always reveals new nuances. Boca is perfect to accompany pasta dishes, meat dishes and mature cheeses: in particular it goes perfectly with the meat of Fassona. To fully appreciate its style, this wine should be served at a serving temperature of 16/18 ºC.
