TASTING NOTES

Production

After fermentation, a maceration takes place lasting between one month and a month and a half, with continuous pump-overs. The last two weeks are done in the dark, with a submerged cap. Then, the red wine is aged in large barrels ranging from 25 to 50 hl for about two years. This is followed by further stabilization in the bottle for about a year.

Organoleptic Characteristics

In the glass, it displays the classic garnet color, with orange tinges complemented by fruits ranging from blueberry to currant, set against a balsamic, almost mentholated background that evolves into sweet spices. On the palate, it enters with power, then broadens with all its delicacy, where the well-structured tannins support the fullness of the sip.

Occasion and Pairing

A wine to bring to a Sunday lunch where we want to pamper our guests, carefully pairing it with hearty dishes of red meats, roasted and braised meats, and game. It can also be successfully paired with fine dry pastries at the end of the meal.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 16-18°C.

The attention to the environment is also evident in the cultivation of Nebbiolo grapes, entirely certified organic, and of all the others, produced with sustainable integrated method. The quality of the wines is also ensured thanks to winemaking processes that take place with traditional methods, but with the help of the best modern technologies, which preserve the purity of the product variety. Furthermore, each harvest is maximized: the vinification is adapted according to the vintage, in order to highlight its distinctive characteristics.
