TASTING NOTES

Garesio best interprets the king of wines, which Barolo unquestionably represents at the peak of Italian oenology; successfully holds its own with the great crus of Bordeaux and Burgundy. In Serralunga, the qualitative heart of the designation, tannins are often sharp swords if not properly controlled. Garesio tames them well, creating a perfectly balanced product. Its organic vineyards are located at between 200 and 300 m above seal level, with excellent southern exposure, yielding a high-quality Nebbiolo, harvested and selected by hand. After fermentation, the fruit undergoes a maceration of varying duration from one month to one and a half months, with continuous pumping over. The last two weeks take place in the dark using the submerged cap technique. The red wine is then aged in large barrels of between 25 and 50 hl, for about two years. This is followed by further stabilisation in the bottle for about a year. It is a classic garnet colour in the glass, with orange veins driven by fruits ranging from blueberry to currants, over a balsamic, almost menthol undertone that slides toward sweet spices. It enters the mouth with good concentration, then expands all of its delicacy, where the complex tannin supports the fullness of the palate. The quality of the wines is also ensured thanks to winemaking processes that take place with traditional methods, but with the help of the best modern technologies, which preserve the purity of the product variety. Furthermore, each harvest is maximized: the vinification is adapted according to the vintage, in order to highlight its distinctive characteristics.
