The organically grown Nebbiolo grapes are hand-selected and then undergo fermentation and maceration for about a month and a half, with continuous pump-overs. For the last 20 days, there is a complete rest, with the cap submerged. The red wine is then transferred to large 40 hl barrels for over two years of aging. Finally, the wine undergoes bottle stabilization for an additional two years.
The king of wines presents itself in the bottle with a delicate garnet color, framed by subtle orange hues. The nose is of great elegance, with aromas of red fruit jam, set against a backdrop of mountain herbs, violet, evolving into tertiary notes of tobacco, licorice, and cocoa. The palate is initially full, warm, and supported by tannins and a lively savoriness, creating a very pleasant balance.
A bottle that will make a great impression at a Sunday lunch, especially when paired with substantial dishes such as red meats, roasted or braised meats, game, and stews.
To fully appreciate its style, this wine should be served at a temperature of 16-18°C.
