Barbaresco Bordini is made from 100% Nebbiolo grapes and comes from the vineyard of the same name located in the municipality of Neive, from vines aged between 27 and 30 years at an altitude of 270 metres on limestone soils. It is aged for 22 months in semi-new barriques; this helps to soften the youthful sharp edges of the Nebbiolo, as well as enriching its profile. Interventions both in the vineyard and in the cellar are kept to a minimum; in fact, this precious wine is neither filtered nor clarified.
In the glass, Barbaresco Bordini presents a very bright and lively garnet red; on the nose, it reveals a highly complex bouquet. Initially, one is enveloped by an explosion of fresh aromas, above all raspberry and rose, which combine perfectly with the spicy nuances imparted by the use of small oak barrels; in this case, on the palate, this yields velvety and perfectly harmonious tannins. The finish is exceptionally long, offering a delightful hint of saltiness combined with exotic and caramel notes.
We recommend pairing it with tagliatelle in a white rabbit ragù, strictly tossed in butter.
To fully appreciate its style, this wine should be served at a temperature of 16–18°C.
