The Barbaresco Bordini is made from 100% Nebbiolo grapes and comes from the eponymous vineyard located in the commune of Neive, with vines aged between 27 and 30 years at an altitude of 270 meters on calcareous soils. It ages for 22 months in semi-new barriques, which helps to soften the youthful edges of the Nebbiolo and enrich its profile. Both vineyard and winery interventions are kept to a minimum; indeed, this precious wine is neither filtered nor clarified.
In the glass, the Barbaresco Bordini displays a very bright and lively garnet red color; on the nose, it reveals a highly complex array of aromas. Initially, you are enveloped by an explosion of fresh scents, predominantly raspberry and rose, which perfectly blend with the spicy nuances imparted by the small wood aging. On the palate, it offers a velvety tannin that is perfectly harmonious. The finish is incredibly long, providing a delightful salty touch combined with exotic notes and hints of caramel.
We recommend pairing it with tagliatelle in a white rabbit ragù, rigorously finished with butter.
To fully appreciate its style, this wine should be served at a temperature of 16-18°C.
