Damijan practices strictly organic farming that is attentive to the balance and health of the plants, going along with the rhythms of nature and the phases of the moon for all kinds of processing, from the vineyard to the harvest to vinification. The soil on which it grows, called ponca, is composed of sandstone marl which is famous for retaining water in the summer months, giving the wines an amazing minerality. The wines express purity, intensity and a distinct territoriality. Prelit, literally “poured” in Slovenian, is a blend of Merlot and Cabernet Sauvignon. Fermentation and maceration on the skins take place for about 40 days in oak truncated conical vats, followed by ageing for 3 years in 20-30 hl wooden barrels and subsequent maturing in the bottle for one year. Intense ruby red, on the nose it releases fruit notes of currants and blueberries, predominant in the Merlot, accompanied on the palate by the elegant and persuasive tannin of the Cabernet Sauvignon, which gives the wine a significant structure and a soft finish. Overall, the Venezia Giulia Rosso Prelit is an intense, full-bodied wine with good balance, excellent with dishes based on red meats, game and venison.
