TASTING NOTES

Damijan's Ribolla Gialla is harvested when it reaches optimum maturation and begins fermentation in contact with the skins in truncated oak vats for 60-90 days. After maceration, it is aged in large barrels for 3 years and ages in bottles for one year. Golden yellow, with light amber reflections. This wine is liquid crispness, its secret cannot be immediately detected on the nose, where it hides, but is released in the mouth. The thick, tannin-rich skin gives the wine a flavour all its own: from dried fruit to soft, enveloping tannins with a long, lingering mineral finish. On the palate, the sensation of chewing wine is revealed. The sensation increases when you immerse yourself in the glass and close your eyes: imagine walking through the rows of vines and tasting Ribolla Gialla berry by berry. Damijan

Damijan Podversic, supported by his wife Elena, has managed to fulfil his childhood dream of producing great grapes varieties to create a great wine. The most important vineyards of the Damijan winery, in addition to the small parcels scattered in the Collio, are located on the wooded slopes facing south of Monte Calvario, on the outskirts of Gorizia, in an uncontaminated environment that is perfect for growing healthy and tasty grapes. Conceived from Damijan's desire to enhance the old abandoned vineyards on a terroir perfect for viticulture, the winery now has six hectares covered with vineyards, respectful of the ecosystem in which it operates. The viticulture practiced by Damijan is rigorously organic, fully attentive to the balance and health of the plants and to safeguarding the surrounding area. From the lands of Friuli-Venezia Giulia, cultivated with passion by the winemakers of the Damijan winery, varied and typical wines of the area are created, such as Ribolla Gialla, Malvasia Istriana and Friulano.
