TASTING NOTES

The Valpolicella Classico of Ca' La Bionda, composed of the classic blend of the territory has a base of 70% Corvina, 20% Corvinone and the remaining 10% divided between Rondinella and Molinara. The wine is processed exclusively in steel where it rests a few months before going into the bottle. A Valpolicella with a ruby red color with some darker nuances due to the youth and the excellent extraction of color. As tradition dictates it is a light but not banal wine, smells of cherry and black pepper, a few more fresh notes of geranium. The mouthfeel is smooth, dynamic and tasty. A hint of crunchy cherries invades the palate. At the table it is excellent in accompaniment from first to second courses of meat, but drunk fresh accompanied by a cutting board is perfect. To fully appreciate its style, this wine should be served at a serving temperature of 14/16 ºC.

In the heart of the historic Valpolicella Classico area, in the municipality of Marano di Valpolicella, lies the Ca' La Bionda winery. Founded in 1902 by Pietro Castellani who always had a great passion for the cultivation of his vines and the vinification of his grapes, the estate covers an area of 29 hectares in the hills, on clay soil at an altitude of between 150 and 300 metres, and with a south-eastern exposure, a favourable position for ripening grapes. The quality of the wines is the result of a family tradition in which passion and sacrifice have gone hand in hand. For more than four generations, the winegrowers and winemakers of the company have dedicated themselves to the processes of cultivating, harvesting, vinification and marketing of Ca' la Bionda products, paying particular attention to the phases of natural drying of the grapes destined for the great wines: Recioto and Amarone, and subsequent ageing in special oak barrels. In the vineyard owned by Piero Castellani, current owner and namesake of the founder, no herbicides or chemical fertilisers are used, and dry stone walls have been restored to create terraces favourable to good maturation of the grapes for the creation of fine red wines from the Veneto region.
