Simplicity, purity and respect for the land are the three cornerstones that Graziano Prà adheres to strictly in the production of his organically farmed wines. We are in Monteforte d’Alpone, east of Verona, the land of the Garganega grape, and for years, guardian of a volcano that gave rise to the hills of the renowned Soave DOC appellation. Soave Otto is the Pra winery’s entry-level wine, its most distinctive, and comes from the sixty-year-old vineyards of Monteforte d’Alpone situated on the south-eastern slope of the estate, in dark, volcanic soil. The name Otto is dedicated to Graziano’s Border Collie, his faithful companion throughout the day. The Garganega grapes, which make up 100% of this wine, are harvested in September. Following soft pressing, fermentation takes place strictly in stainless steel tanks to fully enhance the characteristics of the Garganega grape. Otto is straw-yellow in colour, with golden highlights. It has aromas of hawthorn, jasmine and apricot. On the palate, it is fresh and mineral, with a smooth texture—one of those wines that, served chilled, you could drink endlessly.
Refreshing and lively, it is a versatile wine for everyday drinking, yet it pairs beautifully with fish dishes.
To fully appreciate its style, this wine should be served at a temperature of 8–10°C.
