TASTING NOTES

Sfursat is produced thanks to the natural drying of grapes, favoured by the cool and dry winds of the Alps. The resulting wine is a unique Nebbiolo: rich and austere but with the mineral characteristics and freshness typical of mountain wines. The vineyards of Chiavennasca rest on the designations of Valtellina DOC and DOCG, on the slopes of the Retic Alps, along the right bank of the Adda with an exposure to the south at an altitude varying from 300 to 550 meters s.l.m. Since late September, The grapes are harvested by hand and placed in 4.5 kg boxes. The grapes are dried in a fruit-picker, losing about 30% of their weight. Between the month of December and early January, vinification is carried out at a controlled temperature, with prolonged maceration of 15-20 days. It is aged for two years, at least one of which in wood. The wine has a ruby red colour of medium intensity; the nose is intense and complex with notes of ripe red fruit and spices, such as pepper and cinnamon. Dry taste, with notes of black fruit, tannins present and austere. A full-bodied wine, persistent, with tones of cloves and licorice. Ideal to pair with roasts of red meat, game or local cheese Bitto. To fully appreciate the style, Sfursat must be served at a serving temperature of 15/16°C.

Of all the wine cellars in Lombardy, perhaps Nino Negri's is one of those that has succeeded best in combining traditional techniques with the most complex and avant-garde innovations. Between French and American oak barriques, the oldest traditions of the Valtellina region, where the winery and its vineyards have been in operation for more than a century, still find their place. After careful renovation work aimed at striking a balance between old and new, the company has created a production of high-quality grappas and Lombardy wines with a strong character and rich history. Its territory lies on the slopes of the Valtellina mountains, in an area sheltered from the north wind and exposed to the sun. The area's microclimate is exploited to the full during cultivation, in order to be able to count on excellent grapes that give the final product a class and finesse that is typical of Lombardy.
