TASTING NOTES

Production

Although the current owners, descendants of the Ricci family, settled here in 1941, the history of Villa Pandolfa stretches back a long way. As early as the 1700s, oil, honey and, of course, wine were produced here. Wine made from what was once called Sanginese and today has a far better-known name: Sangiovese. We are in Fiumana di Predappio, in the province of Forlì-Cesena, a historic area in Emilia Romagna for the cultivation of this grape. Pandolfa currently owns 40 hectares of vineyards, situated on hills between 150 and 400 metres in height, with soils rich in calcareous marl. In recent years, the estate has made significant progress in the field of environmental sustainability and, since 2018, has begun the process of converting to organic farming. A distinctive feature of the bottles is the reference to the Renaissance in the label designs, combined with a colour palette reminiscent of the 1950s, making them instantly recognisable and turning them into small works of art. Rubicone Battista IGT is a white wine from Emilia Romagna made from Chardonnay grapes; the vineyards are located in Fiumana di Predappio, cultivated at an altitude of around 150 metres on predominantly clayey soils. Harvested in the third week of August, the grapes are vinified in temperature-controlled stainless steel tanks, with ageing on fine lees for 3 months and a further 3 months in the bottle. 100 ml: 314 kJ / 75 kcal

Organoleptic Characteristics

In the glass, it is a bright straw yellow; on the nose, it offers hints of yellow fruit, tropical fruit and mineral notes on the finish. On the palate, it is full-bodied, with a lovely aromatic intensity balanced by freshness.

Occasion and Pairing

A wine that can easily be enjoyed every day; we highly recommend it with sea fish and shellfish.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 14–16°C.

The Paololeo winery was established in the heart of Salento, in Puglia, and from the start set itself the goal of producing high-quality wines to suit all tastes and budgets. An ambitious project that was passionately pursued, and which reaps its rewards today. The winery, in fact, is a real point of reference for winemaking in Puglia. Thanks to their commitment and passion, in fact, the founding family has been able to study the land and its most valuable characteristics to create Pugliese wines that best describe and enhance the territory. The vines stand on clay-limestone soil, alternating between sandier areas and others with emerging rock. These, combined with the mild climate typical of Salento, have made this area one of the most fertile and suitable for crops of all kinds. The microclimate of the Adriatic coast gives the grapes an exceptional quality, which can be found in the final product.
