TASTING NOTES

Production

The Riviera Ligure di Ponente Pigato Superiore is one of the winery’s most important dry whites. Produced entirely from Pigato grapes grown on the highest part of the hillside. From well-drained soils with a high limestone-clay content and a stony texture, facing south-south-west. The harvest is completed in mid-September, strictly by hand. After careful selection of the bunches, gentle pressing takes place. Fermentation occurs partly in temperature-controlled steel tanks and partly in small French oak barrels in contact with the skins. The wine is aged in the bottle for 10 months. Energy per 100 ml: 71 kcal/297 kJ

Organoleptic Characteristics

Straw-yellow colour. On the nose, aromas of fresh fruit, hay and smokiness. On the palate, it is round and smooth, yet with good acidity that keeps it fresh and lively.

Occasion and Pairing

A Ligurian white to enjoy every day, pairing well with fish dishes, pasta and risotto.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 8–10°C.

Vodopivec is one of the most iconic and radical estates in the Carso wine landscape, a symbol of authenticity, rigor, and absolute respect for the land. Founded by the Vodopivec family in Prepotto, in the heart of the Trieste Karst, the winery was created with the aim of interpreting this extreme territory in its purest and most unmediated form, through wines that are a direct expression of stone, wind, and time. Vodopivec’s philosophy is rooted in an essential and profound approach: wine should not be constructed, but guided. Every intervention is reduced to the strict minimum, both in the vineyard and in the cellar, allowing the territory to speak in its own voice. The vineyards lie on limestone soils rich in rock and minerals, shaped by the Bora wind and a harsh climate, which give the wines a unique structure, saline character, and deeply rooted identity. The vines are cultivated according to natural and sustainable practices, without the use of synthetic chemical products. In the cellar, vinification follows traditional and rigorous methods: spontaneous fermentations, extremely long skin macerations, and extended aging in large oak barrels, often for several years, with no fining or filtration. Time is a central element in Vodopivec’s work, regarded not as a limitation but as an essential tool to achieve balance and depth. The emblematic grape variety is Vitovska, interpreted in an austere and monumental style, capable of expressing the full strength and verticality of the Carso. Vodopivec wines are essential, deep, and long-lived, characterized by extraordinary mineral tension and a distinct, unmistakable personality. They do not seek immediacy, but demand attention and respect, rewarding those who know how to wait.
