TASTING NOTES

The Metodo Classico Brut Nature San Eize is made of 100% Pinot Noir grapes, obtained from vineyards located on a clay type soil and grown organically. The grapes after the harvest follow spontaneous fermentation by indigenous yeasts and malolactic fermentation. The wine is fermented in bottle according to the Champenoise method and the wine is left on the yeasts for 24 months. The Metodo Classico Brut Nature San Eize is presented in a straw yellow colour. The nose is marked by hints of yellow fruit and field herbs. References to the world of pastry remain more in the background. Creamy, fresh, opulent but fine on the palate, with a good persistence and great minerality. Ideal as an aperitif or with white meat, fresh cheeses. Andre Beaufort is one of the first Champagne companies that since the end of the sixties has taken a path in contrast to the interventionist practices in the vineyard and cellar, based on the use of synthetic products and chemical agents, choosing to use only natural products and manual/ mechanical processing. All wines undergo their first fermentation in exhausted wooden vats without the use of selected yeasts. All base wines undergo malolactic fermentation.
