TASTING NOTES

The sparkling wines of the Abissi line come from the blending of typical grapes of Tigullio and from a bottle aging at 60 meters below sea level, at a constant temperature of 15 ºC, off Cala degli Inglesi in the Marine Park of Portofino. The bottles are laid in steel cages and placed on the bottom by professional divers. At the end of the aging, they are recovered for settling and disgorging: when they return to the surface the bottles are works of art, embellished by time and rest in the depth of the sea. They are then wrapped with plastic wrap and then marketed. This is how the Gulf of Tigullio Portofino Abissi was born. The grapes are harvested by hand slightly in advance to maintain a good freshness and flavor. The bottles remain on the bottom for aging for 18 months before disgorgement. In the glass it has an intense straw yellow color, with an intense and persistent perlage. The nose is broad, enveloping and pungent. Characterized by a clear brackish and citrus note. In the mouth it has a good structure, broad and intense, with a sip characterized by a dry and fresh taste, with a very persistent mineral finish. THE WINERY

Bisson

In 1978, sommelier and wine expert Pierluigi Lugano decided to restore value to the Ligurian grapes from the Levante Riviera. After a start in winemaking with modern techniques and experiments made on locally purchased grapes, he decided to buy vineyards in and around the Cinque Terre area, in order to control every step in the production of his Ligurian wine and the level of quality. Here he started again with the processing of native Ligurian white wines, which had almost disappeared up to this point, such as Bianchetta Genovese and Ciliegiolo, and the creation of characterful reds such as Musaico. But the greatest innovation came with the Metodo Classico sparkling wine, Abissi. In the absence of underground cellars, Bisson began maturing the wine 40 metres below the sea floor, in the Baia del Silenzio, near Sestri Levante. Bisson's production is also aimed at enhancing the local terroir, which provides the area's typical grape varieties, including Vermentino, which when aged, produces some dried grape sweet wines. The latest experimentation is linked to respecting the sandy and stony soil, and to achieve that, Bisson is strongly limiting the use of pesticides.
