TASTING NOTES

The Rovellotti winery boasts a centuries-old and solid tradition of wine production, based on innovation and on increasingly facilitated winemaking methods and has a sustainable perspective. Ghemme Chioso dei Pomi from the Novara hills is made from 85% Nebbiolo and 15% Vespolina. After harvesting, the grapes are transported to the cellar where the alcoholic and subsequently malolactic fermentation takes place in steel tanks at a controlled temperature. It is aged first in steel tanks and subsequently 36 months in large Swiss oak barrels from the Jura and at least 9 months in the bottle. This wine has a garnet red colour. THE WINERY

Rovellotti

In the hilly areas of Veneto lies the Conca del Vajol. With its soils with a strong presence of limestone and tufa, with traces of clay and skeleton, it is home to the Cantina Rubinelli Vajol and its 10 hectares of vines, in the heart of the Valpolicella territory. Perfect sun exposure of the vines and a temperate, well-ventilated climate provide ideal terrain for the cultivation of prized grapes, most of which are the indigenous Corvina, Corvinone, Rondinella, Molinara and Oseleta. The grapes are cultivated and cared for using different methods, the traditional ones and some more modern ones. In addition, the land is respected to the highest level with regards to its form, also thanks to the use of mechanical weeding instead of herbicides and synthetic fertilisers. The absolute quality of the wines produced in the winery is also due to a harvest that is entirely carried out by hand in successive steps, depending on the necessary maturation period of the grapes. The result is an absolute excellence of Veneto red wines such as Amarone, Valpolicella Classico Superiore, Recioto, Ripasso and Valpolicella Classico.
