Production

A small winery that perfectly reflects the personality of its owner: Stefano Novello. Contemporary and unconventional labels for the wines of the Ronco Severo winery, produced with a focus on organic farming and created with respect for nature. Friulano Friuli Colli Orientali is a highly expressive orange wine, produced through long maceration on the skins and fermentation catalysed by indigenous yeasts. Ronco Severo’s Friulano white is made from grapes grown in the vineyard of the same name, with vines over 40 years old, harvested late to impart greater body and robustness. The must ferments on the skins in oak vats and is then aged in Slavonian oak barriques for 24 months in contact with the fine lees. Bottled without filtration or fining, during the waning moon. 100 ml: E=330 kJ/79 kcal

Organoleptic Characteristics

A fine wine, with a refined and delicate nose and an intense bouquet reminiscent of wildflowers. Well-balanced and pleasant, it is dry on the palate without any harshness, with a good alcohol content and moderate acidity; fresh and smooth with a fruity flavour.

Occasion and Pairing

Excellent with fish in sauce, fish soups, richly seasoned white meats or medium-aged cheeses.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 10–12°C.

THE WINERY

Ronco Severo

The Ronco Severo winery is located in the province of Udine, in Prepotto. A winery that reflects the quality of its products and the spirit of owner Stefano Novello. A soul who grew up in a family of farmers, at a certain point Stefano decided to turn the family business around, focusing on the production of artisanal and environmentally friendly labels, a path that led him to obtain organic certification. Today, the Ronco Severo winery is identified in a contemporary way, where body and structure are always present. The vineyards of Ronco Severo stand at a height of about 150 metres above sea level, and their terroir consists of sandstone marls, called “ponca” in the local dialect. Mainly local varieties such as Picolit, Pinot Grigio, Friulano, Schioppettino, Ribolla Gialla and Refosco are cultivated. In the vineyard, every job is meticulous, which is why production is very limited each year, but at the same time it offers higher quality products.
