TASTING NOTES

Cabochon was born in 1987, from Emanuele Rabotti's intuition to select the hillside crus more carefully and to experiment with a new vinification system that introduced the barrique for the first fermentation of the must. The results were such that the resulting wine soon became a key label of the company, with its name “Cabochon” evoking the preciousness of jewellery. Refinement, intensity, elegance and an endless perlage make this sparkling wine a prestigious and precious Franciacorta. A brilliant golden straw yellow colour with a fine and persistent perlage, Monte Rossa's Franciacorta Cabochon Brut is made from 70% Chardonnay and 30% Pinot Noir grapes, vinified in stainless steel and aged in the bottle for a long time. This Metodo Classico sparkling wine from Lombardy is bright and flamboyant, on the nose it is fragrant and intense and evokes scents of yellow peach, citrus medlar and memories of pastries. The well-structured palate with notes of honey is well balanced by dynamic freshness and tantalising minerality.
