Cabochon was born in 1987, from the intuition of Emanuele Rabotti to select more carefully the crus of the hill and to experiment with a new vinification system that introduced the barrique for the first fermentation of the must. The results were such that the wine obtained soon became a key label of the company, with its name "Cabochon" evoking the preciousness of jewelry.
Refinement, intensity, elegance and an endless perlage make this Franciacorta prestigious and precious. Paglierino golden brilliant, with fine and persistent perlage, the Franciacorta Cabochon Brut di Monte Rossa is produced with Chardonnay grapes for 70% and Pinot Noir for the remaining 30%, vinified in steel and long aged in bottle. This Metodo Classico Lombardo is bright and flamboyant, the nose is fragrant and intense and evokes scents of yellow peach, citrus medlar and memories of pastry. The mouthfeel, with good structure and honey notes, is well balanced by dynamic freshness and tantalizing minerality.
