TASTING NOTES

The production of sparkling wine by the second fermentation in bottle method has always been maintained by ancient local families like the Ricci Curbastros. In 1967, the area’s commitment to production was recognised by law, authorising the production of Franciacorta DOC white, red and sparkling wines. From that year onwards, Azienda Agricola Ricci Curbastro was one of the first 11 producers of Franciacorta DOC sparkling wines. This Franciacorta Brut represents excellence in the panorama of Italian Metodo Classico sparkling wines. This Franciacorta Brut is a blend of 60% Chardonnay, 30% Pinot Blanc and 10% Pinot Noir. After harvesting, the grapes are soft pressed before proceeding to fermentation at a controlled temperature in stainless steel tanks. This is followed in spring by a slow second fermentation in the bottle according to the traditional Franciacorta method. The bottles remain on racks for at least 30 months, guaranteeing the unmistakable bouquet due to contact and autolysis of the yeasts. After disgorgement, with the addition of a very dry dosage syrup (only 8 g/litre), the Franciacorta undergoes further ageing in the wine cellar for a few months. Bright straw yellow in colour, the mousse is rich and abundant with a fine and persistent perlage. On the nose it is slightly floral, elegant, with considerable intensity and notes of yeast and freshly baked bread. In the mouth it is well-structured but soft and creamy, despite its dry flavour, with fruity notes and a long and balanced finish. THE WINERY

Ricci Curbastro

The production of the Ricci Curbastro family dates back centuries, with the strength of the traditions and secrets handed down from generation to generation. In addition to the companies in Lugo in the municipality of Romagna and Rontana in the municipality of Brisighella, the family also runs the estate of the same name. The latter is located in the area of Franciacorta, and is one of the most important in the production of high-quality Lombardy wines. A painstaking work full of commitment, behind which lies also a great study of the territory and the most modern techniques, to bring out the best not only of the terroir, but also of the raw material. The winery boasts a surface area of around thirty hectares, most of which are planted with vineyards and farmed according to the strict rules of “Consorzio vini Franciacorta”. Fermentation takes place in an underground wine cellar and as a result of its strategic location, it favours slow and steady maturation, leading to an absolutely spectacular end result.
