The second label of the Frederic Levin project, this Champagne comes from one of the most chalk-rich terroirs, where Chardonnay grapes find their fullest expression on the south-east facing slopes. The name ‘Gars’ is short for ‘Garson’ and features three stylised waiters on the label. The wine matures for around 40 months on the lees in cellars carved into the chalk. A rich Champagne with a brilliant golden colour, hints of ripe fruit and dried fruit, and subtle notes of aromatic herbs such as thyme and sage. Freshness and savouriness are well-balanced, making the palate smooth but not sweet. Light effervescence and excellent length.
Frederic Levin’s Champagne Grand Cru Gars is excellent as an aperitif or paired with fish main courses.
To fully appreciate its style, this wine should be served at a temperature of 8–10°C.
