A form of perfection, Maison Bollinger has been crafting the finest Champagne with a refined, complex and elegant style since 1829. The 179 hectares of estate vineyards consist of 85% Grand and Premiers Crus divided into the cultivation of Chardonnay, Pinot Noir and Pinot Meunier grapes. Bollinger's underground wine cellar winds its way through kilometres of stone tunnels, directed by Mathieu Kauffman, who obsessively and meticulously controls all production processes, according to tradition and even rejecting some innovative techniques. The remuage of bottles, for example, is still done by hand. After the first fermentation in stainless steel or wooden vats, the wines are bottled in spring and descended into the silence of the chalk galleries, where they rest for at least three years for the Cuvée Speciale and several more years for the vintages. It is this long resting period that gives the aromas this rare delicacy and the perlage a velvety perlage and texture.
