TASTING NOTES

Champagne Extra Brut Cuvée 747 consists of a blend of Chardonnay, Pinot Meunier and Pinot Noir that perform a first fermentation in large oak barrels with a stop on the fine lees, assembly with Reserve Wines for 33% and refermentation in the bottle according to the Champenoise Method. Without filtrations and with low levels of sulfites, ages in bottle on lees for at least 48 months. It comes from vineyards partly in Dizy, such as Corne Bautray and Terres Rouges, and partly in Avize and Ay and gives the nose beautiful notes of yellow fruit, with a slight minerality on the finish that supports a thick substance and that brings to the freshness of a freshly cut cedar. A round and fine palate that makes Jacquesson’s Champagne Extra Brut Cuvée elegant, slender and extremely pleasant. Intense and complex, with hints of candied fruit, citrus, dried fruit and mineral nuances, it is excellent as an aperitif or as an accompaniment to fish dishes. To fully appreciate the style, this Champagne should be served at a serving temperature of 8/10 ºC. Read more Read less
THE WINERY

Jacquesson

JM Sélèque is one of the most dynamic and refined realities of the new generation of artisanal Champagne, a symbol of precision, balance, and a deep connection to the region. Founded by the Sélèque family and now led by Jean-Marc Sélèque, the house is based in Pierry, near Épernay, where it continues to develop a contemporary vision of Champagne, based on respect for nature and the valorization of individual parcels. J.M.'s philosophy Sélèque is based on a sustainable and artisanal approach, in which each wine is born from careful observation of the vineyard and the desire to authentically express the identity of the terroir. Vineyards are grown according to environmentally friendly practices, with targeted interventions and constant attention to biodiversity, soil health, and the natural balance of plants. The plots extend between the Vallée de la Marne, the Cote des Blancs and the Cote de Sézanne, on soils rich in gypsum, clay and limestone that give the wines depth, energy and mineral precision. Chardonnay, Pinot Noir, and Pinot Meunier are vinified with sensitivity and rigor, resulting in elegant, vibrant, and deeply territorial cuvées. In the cellar, the work follows a philosophy of minimal interference: spontaneous fermentations, prolonged refinements on the yeasts and calibrated use of wood allow the wines to develop complexity and harmony without losing freshness and tension. The dosages, always measured, are designed to accompany the wine without altering its natural balance and expressive purity. The JM Champagnes Sélèque are distinguished by a contemporary, refined and luminous style, characterised by great aromatic precision, creamy texture and a vibrant mineral energy. Each bottle tells a modern and sensitive vision of Champagne, where elegance, authenticity and drinkability coexist in perfect balance. Every cuvée by JM Sélèque is a sincere and harmonious expression of contemporary artisanal Champagne, a meeting of family tradition, research, and absolute respect for terroir. Name and address manufacturer: Champagne JM Sélèque – 1 Rue de la Cote Legris, 51530 Pierry, Champagne, France. Wines should be stored in a cool, dry place, away from sources of heat and direct light.
