Bollinger's Champagne Brut Special Cuvée 007 James Bond is a special edition that celebrates the historic bond between the House and cinema's most famous secret agent. It is born from Bollinger's unmistakable style, founded on structure, depth and complexity. The blend is composed predominantly of Pinot Noir, mostly from the historic crus of the Montagne de Reims, with the addition of Chardonnay and a small percentage of Pinot Meunier. The grapes are hand-picked and partially vinified in small oak barrels, the House's distinctive signature. A significant number of reserve wines, some aged for many years in magnum, lend stylistic continuity and great complexity. The foam setting is done according to the Champenois Method, with a long aging on the yeasts and a perfectly balanced Brut dosage.
On view, it presents itself with a deep and bright golden yellow color, crossed by a fine and persistent perlage. On the nose it is broad and seductive, with scents of ripe apple, pear, candied citrus and dried fruit, followed by notes of brioche, hazelnut, sweet spices and light toasted nuances. On the palate it is full, structured and enveloping, with a creamy bubble, a well-integrated freshness and a remarkable depth of taste. The finish is long, elegant and complex, with returns of ripe fruit and spicy sensations.
