TASTING NOTES

Special Cuvée is composed by more than 85% of Grand and Premiers Crus of the main three varieties: 60% Pinot Noir, 25% Chardonnay and 15% Meunier. The delicate blend is the true expression of a vintage and of most of the Reserve Wines, some of which are stored in magnums from 5 to 15 years. A cuvée with a constancy of style and quality. After alcoholic fermentation, the wine is aged in the cellar for twice the time required by the specification, with a final sugar dosage of 7-8 g/l. A beautiful aromatic complexity, Special Cuvée is the result of a precise blend of different vintages, which give the wine all its structure and make it a reference of the Bollinger style. The glass has a golden yellow color and a very fine perlage. A beautiful aromatic complexity is revealed to the nose with notes of ripe fruit and spicy hints, of toasted apples, compote and peaches. On the palate a subtle combination of structure, length and liveliness. Bubbles like velvet, with aromas of pear, brioche, spices and notes of fresh walnut. It is perfect for sharing among friends, for a simple and meaningful moment. It is the ideal Champagne to combine with a risotto with cardoons, Beaufort cheese and a hint of truffle. THE WINERY

Bollinger

A form of perfection, Maison Bollinger has been crafting the finest Champagne with a refined, complex and elegant style since 1829. The 179 hectares of estate vineyards consist of 85% Grand and Premiers Crus divided into the cultivation of Chardonnay, Pinot Noir and Pinot Meunier grapes. Bollinger's underground wine cellar winds its way through kilometres of stone tunnels, directed by Mathieu Kauffman, who obsessively and meticulously controls all production processes, according to tradition and even rejecting some innovative techniques. The remuage of bottles, for example, is still done by hand. After the first fermentation in stainless steel or wooden vats, the wines are bottled in spring and descended into the silence of the chalk galleries, where they rest for at least three years for the Cuvée Speciale and several more years for the vintages. It is this long resting period that gives the aromas this rare delicacy and the perlage a velvety perlage and texture.
