TASTING NOTES

Fermentation takes place in refined Austrian wooden vats produced by Stockinger, known for using the highest quality wood without toasting, which preserves the delicate essences of the must. Subsequently, the wine undergoes a period of aging in wooden barrels of various sizes and vintages. It appears in the glass with a charming pale garnet red color, enriched by ruby reflections and enviable transparency. On the nose, it reveals a complex and enveloping bouquet, characterized by aromas of red fruits such as cherries and plums, accompanied by elegant notes of withered flowers, spices, tobacco, and a slight minerality. With aeration, intriguing hints of leather and wet earth emerge. On the palate, the wine stands out for its body and structure, with present yet silky tannins. The freshness is beautifully balanced by vibrant acidity, creating perfect harmony. The flavors mirror the aromatic bouquet, offering long persistence and complexity that evolves over time. It pairs magnificently with red meat dishes, braises, game, and aged cheeses.
