TASTING NOTES

Production

The Barbaresco Sorì Tildin is a pure Nebbiolo wine, made from grapes cultivated in the eponymous vineyard, which in the local dialect refers to the summit of a hill facing south. It is an elegant and unique wine that can age for an incredibly long time. The Nebbiolo grapes are hand-selected, and the aging process takes place over 12 months in French oak barriques and another 12 months in large, fine wooden casks. Once bottled, it rests for a few more months in the cellar before being released onto the market.

Organoleptic Characteristics

It presents a brilliant red color reminiscent of garnet, and on the nose, it is superb: notes of underbrush, ripe fruit, spices, and subtle hints of aromatic herbs. On the palate, it showcases an extraordinary body, with a warm and enveloping taste. The Nebbiolo tannins are clearly evident, along with its remarkable acidity. Perfectly balanced and extraordinarily persistent.

Occasion and Pairing

It truly reveals its best when paired with aged cheeses or dishes featuring truffles.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 16-18°C.
