TASTING NOTES

Production

Amarone della Valpolicella Riserva DOCG is made from a blend of Corvina and Corvinone (70%) and Rondinella (30%). After harvesting, the Recioto and Amarone grapes are left to dry for around 100 days in climate-controlled rooms, to achieve the characteristic structure and smoothness typical of these wines. Following vinification, the wine is first aged for 5 years in large wooden barrels (Slavonian oak) and then for at least a further 2 years in glass bottles.

Organoleptic Characteristics

An intense cherry red with garnet highlights, Amarone Riserva Santa Sofia presents an intriguing bouquet on the nose, featuring aromas of ripe red fruit, in particular: black cherry, marasca cherries preserved in alcohol and raspberry, accompanied by spicy notes of roasted coffee, coffee and carob, and a hint of menthol. On the palate, the sensations are in keeping with the aromas and, despite its substantial structure, it is balanced, elegant and harmonious. It finishes long and persistent, supported by good acidity and lively tannins.

Occasion and Pairing

Pair with stewed meats such as slow-cooked and braised dishes, game and mature cheeses. It is also appreciated as a meditation wine.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 16–18°C.

THE WINERY

Santa Sofia

The Veneto, one of the areas of Italy where wine production is best known and most prestigious. It is here, near Verona, that the 8 hectares of vineyards belonging to the Sartori winery, founded in the late 19th century, are located. Different vineyards are cultivated on the hills of this area of Valpolicella, with different sun exposures and soil compositions. Everything contributes to the production of very different grapes and wines, but always elegant and with distinctive aromas. Careful production from the earliest stages and harvesting ultimately results in fine red wines from Veneto such as Amarone, Valpolicella and Bardolino and fresh white wines from Verona including Lugana, Bianco di Custoza and Soave. Every wine produced and sold in this winery conveys the most authentic Veronese tradition, but reinterpreted in a personalised way.
