TASTING NOTES

Production

The grapes used come from Negrar and Sant'Ambrogio della Valpolicella, consisting of 40% Corvina, 30% Corvinone, 15% Rondinella, 10% Oseleta, and 5% Croatina. The grapes intended for Amarone della Valpolicella undergo a natural drying period of at least 3 months after harvesting. Following an initial pressing, they rest in stainless steel or cement tanks for the first phase of indigenous yeast latency, allowing them to adapt to the new environment and initiate fermentation. To preserve aromatic characteristics, no pump-overs or punch-downs are performed, prolonging contact with the skins for over 2 months. After racking, the fermented wine ages in Slavonian oak barrels for at least 5 years, followed by a minimum of 1 year of bottle aging.

Organoleptic Characteristics

This Amarone della Valpolicella is produced only in the best vintages. In the glass, it showcases an intense ruby red color with garnet reflections from aging. The nose reveals notes of ripe cherry, sour cherry, and slightly dried plum, which enter the palate with a rich savoriness that confirms the olfactory hints of jam and spices like cinnamon, licorice, and cocoa.

Occasion and Pairing

It pairs best with roasted meats, boiled dishes, and aged cheeses like Parmigiano Reggiano or Grana Padano. Enjoyed on its own at the end of a meal, it is superb.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 16–18°C.

THE WINERY

Zyme

The name Zýmē comes from the Greek and means yeast, a fundamental element in the world of oenology, but also a symbolic element that recalls naturalness. Nature is also emphasised in the architectural construction of the company. Founded by Celestino Gaspari, the Zýmē winery represents the true synthesis between man and terroir and is located in the heart of Valpolicella Classica in San Pietro in Cariano, in an ancient sandstone quarry dating back to the 15th century. Looking at the winery from above, one can see the pentagonal shape of the vine leaf, and each tip corresponds to one of the five main elements for wine production: man, vine, earth, sun, water. The various production processes also take place in accordance with nature's timing and through a special knowledge of production processes. Geologically speaking, we are located on the slopes of the Lessini Mountains, in a soil consisting of marly and earthy limestone also known as “Pietra Gallina”, which gives minerality and freshness to the Zýmē wines. In perfect balance with the winemaker's idea of sustainability, the Zýmē winery has always sought to revalue and enhance the indigenous grape varieties cultivated in nine hectares of vineyards.
