TASTING NOTES

Amarone Classico della Valpolicella Riserva Ravazzol is limited in production because the Riserva was produced only in the best vintages, in which climatic conditions ensure that an optimal ripening of the grapes can correspond to a high degree of acidity that will guarantee longevity to the wine. The best grapes of Corvina, Corvinone, Rondinella and Molinara, from the historic area of Valpolicella. Once harvested, the grapes are left to dry, so as to give the wine great concentration and a bouquet of great intensity. Then alcoholic fermentation takes place and an aging of 8 years in a large new oak barrel. This wine impresses with an extraordinary elegance, refinement and balance. It is expressed in the glass with a brilliant red impenetrable with violet reflections, intriguing for the intensity of the aromas, deep, of great complexity and the sensations of ripe fruit and jam that evoke the sip. On the palate it expresses power and balance, rich and opulent, but well sustained by sapidity and freshness that lengthen in the floral finish and spicy hints. Ideal to be brought to the table and be drunk with red meat, cheese and tasty dishes, but above all to enjoy alone, perhaps in front of the fireplace. THE WINERY

Ca' La Bionda

In the heart of the historic Valpolicella Classico area, in the municipality of Marano di Valpolicella, lies the Ca' La Bionda winery. Founded in 1902 by Pietro Castellani who always had a great passion for the cultivation of his vines and the vinification of his grapes, the estate covers an area of 29 hectares in the hills, on clay soil at an altitude of between 150 and 300 metres, and with a south-eastern exposure, a favourable position for ripening grapes. The quality of the wines is the result of a family tradition in which passion and sacrifice have gone hand in hand. For more than four generations, the winegrowers and winemakers of the company have dedicated themselves to the processes of cultivating, harvesting, vinification and marketing of Ca' la Bionda products, paying particular attention to the phases of natural drying of the grapes destined for the great wines: Recioto and Amarone, and subsequent ageing in special oak barrels. In the vineyard owned by Piero Castellani, current owner and namesake of the founder, no herbicides or chemical fertilisers are used, and dry stone walls have been restored to create terraces favourable to good maturation of the grapes for the creation of fine red wines from the Veneto region.
