TASTING NOTES

In the 4 hectares of property is grown most of the fruit used for production. Herbs that cannot be grown are harvested in the woods, where they grow spontaneously. Capovilla distillates are produced with spontaneous fermentations, mathematical precision distillations, long years of aging in steel, producing grappa of very high calibre. The distillate of Wild Prunes of Capovilla is made with fruits grown spontaneously, collected after careful research by Gianni Capovilla himself and his friends and collaborators. It is plum to the nth degree, the distillation concentrates every drop of flavor and scent. Dry and pleasantly soft, the fruit explodes both on the nose and on the palate. Meditation distillate, to enjoy every nuance. To fully appreciate its style, this distillate should be served at a serving temperature of 12/14 ºC.
