TASTING NOTES

The Cavalleri family's holdings in Erbusco were first documented in the fifteenth century, but it is from the late nineteen-sixties onwards, thanks to the contribution of Gian Paolo Cavalleri and his son Giovanni, that the company began its contemporary journey, carving out a place for itself among the companies that have been able to make the most of the vocation of the land and the quality of the wines of Franciacorta. Guided to this day by Giovanni's grandchildren, Cavalleri now owns 42 hectares of vineyards, cultivated according to principles of utmost respect for the environment and the ecosystem, so as to be able to guarantee the highest quality grapes in the winery, and to be able to best represent their seasonal and varietal characteristics. This Franciacorta Dosaggio Zero is produced from Chardonnay from vineyards that are at least 30 years old. After harvesting, the grapes undergo a soft pressing process to extract only the free-run must. Following fermentation and ageing of the bases, the final cuvée rests on the lees for over 40 months. The result is an exceptionally elegant refined Franciacorta. Straw yellow in colour, brightened by a very fine and intense perlage, this zero dosage wine reveals floral and spicy notes on the nose together with sensations of small pastries, all well balanced by fresh and citrus touches. On the palate, it is vertical and pleasantly citrusy, with a length and a full flavour, vibrant finish. Ideal as a sparkling wine to be drunk as a couple during a romantic dinner, it is recommended in pairings that bring out its elegant and essential character, such as a red prawn crudo or a salmon tartare.
