TASTING NOTES

Cantina I Clivi, founded in 1996 and built in Rosazzo, comes from a history of winegrowers by choice and not by tradition. The production includes high-quality wines that embody the authentic expression of the terroir, take advantage of indigenous vines and are obtained using methods that are as natural as possible, limiting interventions in the vineyard and production facility to a minimum. Ribolla Gialla Brut Sablà is made from 100% Ribolla Gialla grapes in a sparkling wine version, resulting from spontaneous alcoholic fermentation on yeasts and maturation in the same vat to mature on lees, and after two months it is bottled under constant pressure. Sparkling wine made in this way retains the primary aromas characteristic of the grape variety, all played on fineness. Straw yellow in colour, Ribolla Gialla Sablà is highly aromatic, extremely crisp and refreshing, with a fine and elegant perlage. Characterised by hints of golden apple, verbena, lemon peel and savoury, mineral elements. Even on the palate, the wine proves to be whispery and graceful, perfectly balanced between savoury, freshness and fineness. THE WINERY

I Clivi

Very old and mostly indigenous vines are to be found in the vineyards of i Clivi, a point of reference in the production of Ribolla Gialla in Friuli Venezia Giulia. Most are between 40 and 60 years old, but in some plots there are specimens not far from a century old. Sinking their roots into sandstone soil, they have a low yield per hectare, which guarantees the natural concentration and complexity of their fruit. Guarding such an important heritage, the Zanusso family has made territoriality and longevity the keywords of its business since 1996. The property's twelve hectares are divided into two DOC zones with different microclimates and are cultivated with different varieties: Ribolla Gialla, Friulano, Verduzzo and Malvasia. In the I Clivi winery, the grapes are processed avoiding the use of machinery as much as possible in order to preserve their integrity and uniqueness. The result of such finesse are white wines and sparkling wines with great personality and character, yet at the same time as light as a caress for the palate.
