TASTING NOTES

I Clivi Ribolla Gialla works really well. And alongside the still version, surprising in its complexity, the sparkling version appears. Where the term Nature refers to the ancestral method: there is no secondary fermentation in the bottle and therefore no addition of sugar and yeast, which ultimately also means no addition of alcohol. After pressing, the must is transferred to an open tank for fermentation. Towards the end of fermentation, when the residual sugar is around 25 grams per litre, the tank is closed to trap the CO2 released by fermentation. This differs from the ancestral method, which ends fermentation in the bottle. The wine is then left in the same tank to mature on its yeasts until bottling under pressure. The sparkling wine produced in this way is extraordinarily youthful. The bright colour anticipates a nose of very fresh fruit aromas, which paves the way for a palate where the fine perlage, not at all invasive, flows on the palate leaving an enveloping sensation of acidity. THE WINERY

I Clivi

Very old and mostly indigenous vines are to be found in the vineyards of i Clivi, a point of reference in the production of Ribolla Gialla in Friuli Venezia Giulia. Most are between 40 and 60 years old, but in some plots there are specimens not far from a century old. Sinking their roots into sandstone soil, they have a low yield per hectare, which guarantees the natural concentration and complexity of their fruit. Guarding such an important heritage, the Zanusso family has made territoriality and longevity the keywords of its business since 1996. The property's twelve hectares are divided into two DOC zones with different microclimates and are cultivated with different varieties: Ribolla Gialla, Friulano, Verduzzo and Malvasia. In the I Clivi winery, the grapes are processed avoiding the use of machinery as much as possible in order to preserve their integrity and uniqueness. The result of such finesse are white wines and sparkling wines with great personality and character, yet at the same time as light as a caress for the palate.
