Il Cortile is made of 100% Corvina grapes, grown in the morainic hills of Lake Garda. The grapes are harvested manually at the end of September, followed by a soft pressing and a short maceration on the skins with fermentation at controlled temperature. The wine remains in steel until bottling. Ruby-colored, clear with reflections that begin to become slightly garnet. It expresses the varietal characteristics of Corvina with a typical bouquet of red fruit that recalls cherries and plums and intertwined with spicy notes of cinnamon and cloves. Balsamic notes and a slightly citrusy finish, reminiscent of red orange. The sip is dry: it caresses the palate without weighing it down, balanced by a pleasant freshness. The tannins, still young, are well integrated in this authentic and frank nature of the pure Corvina. The closing is moderated by a slight savoury that contributes to an overall balance in line with the type of vine and wine obtained from it. The perfect match is the typical one, with polenta and soppressa veneta in a casual evening with friends. Accompany light dishes and daily, based on pasta, white meat. To be paired with seasonal risotto and vegetable and legume soups. To fully appreciate the style, this champagne must be served at a serving temperature of 14/16°C.
