TASTING NOTES

Tradition and innovation characterise and identify the Zýmē winery, located in the heart of the Valpolicella Classica area in a 15th century sandstone quarry, now restored and marking the strong bond between the company and the territory. The winery, whose name literally means “yeast”, works under an organic farming regime, with a focus on respect for nature and a care for new wines that enhance the Valpolicella territory. A mosaic of sensations, Zýmē's Veneto Kairos shows the connection with the Harlequin project, Harlequin's dress made of multicoloured pieces, just as the wine is made from 15 different grapes, each with its own tasting profile. In Greek, Kairos means “convenient, opportune, the right time”. The addition of the sundial and clock on the label expresses the concept of exact time. The grapes used for the production of Kairos all come from estate vineyards in the area between Vicenza and Verona and consist of a minimum of 15 vines, 4 white and 11 red: Garganega, Trebbiano Toscano, Sauvignon Blanc, Chardonnay, Corvina, Corvinone, Rondinella, Cabernet Sauvignon, Cabernet Franc, Merlot, Shyraz, Teroldego, Croatina, Oseleta, Sangiovese, Marzemino. The bunches are harvested by hand, each type according to the correct maturation time of each individual grape variety, and are then placed in trays for the time needed to complete the harvest. Vinified in steel and cement vats, the period of cryomaceration and fermentation with indigenous yeasts takes about 20/25 days, with slight manual handling of the must and marc. This is followed by racking and ageing in barriques for at least two years without racking. Bottle ageing then takes place for at least 6 months. Displaying a bright ruby red colour with garnet reflections in the glass, Kairos has good intensity with a fruit, floral and mineral mix. On the palate it reveals enveloping and complex sensations, with spicy notes: tobacco, cinnamon, nutmeg, and cloves. THE WINERY

Zyme

The name Zýmē comes from the Greek and means yeast, a fundamental element in the world of oenology, but also a symbolic element that recalls naturalness. Nature is also emphasised in the architectural construction of the company. Founded by Celestino Gaspari, the Zýmē winery represents the true synthesis between man and terroir and is located in the heart of Valpolicella Classica in San Pietro in Cariano, in an ancient sandstone quarry dating back to the 15th century. Looking at the winery from above, one can see the pentagonal shape of the vine leaf, and each tip corresponds to one of the five main elements for wine production: man, vine, earth, sun, water. The various production processes also take place in accordance with nature's timing and through a special knowledge of production processes. Geologically speaking, we are located on the slopes of the Lessini Mountains, in a soil consisting of marly and earthy limestone also known as “Pietra Gallina”, which gives minerality and freshness to the Zýmē wines. In perfect balance with the winemaker's idea of sustainability, the Zýmē winery has always sought to revalue and enhance the indigenous grape varieties cultivated in nine hectares of vineyards.
